Thai Peanut Chicken Satay and a Review and Giveaway of The Prime Grill Cookbook

November 13, 2013 by overtimecook 235 Comments

thai peanut chicken satay on overtimecook

If you keep kosher and live in the New York area, chances are, you’ve heard of The Prime Grill. This iconic kosher restaurant has been at the forefront of upscale kosher cuisine for over 10 years. And for those of us, like me, who have never been to this restaurant, they’ve released a beautiful new cookbook full of delicious recipes, including some signature dishes from Chef David Kolotkin.

I’m super excited to review The Prime Grill Cookbook today! Scroll past my review for a sample recipe and a chance to WIN a copy!

prime grill

At a first glance:

Wow, now I really want to go eat in the prime grill! The food looks delicious and it’s beautifully presented. Most importantly, the chef’s desire to put delicious and top quality food is really represented throughout the book. Next time I want to make a fancy meal, I know which cookbook I am going to open!

Some features I liked:

The book starts off with a history of the restaurant, and then a bunch of details about this restaurant – and restaurant kitchens in general. As an avid cook, I found that super interesting – and like I said – it sure made me want to eat there!

The book is organized by menu section – so there’s an hor d’oeuvre section, an appetizer section, soup, salad, fish, meat, side dishes and of course…dessert!

Many of the recipes have a “chef’s tip” along with it. These range from simple tips like what sauces to serve the dish with, to helpful ideas of what to do with something you might have otherwise thrown out, like potato skins!

Another thing I really liked about this book is that it’s quite different from the others. It’s not a book by a home cook. It’s by a restaurant chef, and thus, it presents more complex, more sophisticated and more upscale recipes than a lot of other cookbooks.

Some recipes I can’t wait to try:

Chicken and Waffle Nuggets with Maple Syrup Dip – now THIS is what I call a creative new twist on chicken nuggets! How delicious does that sound?

Prime Grill Delmonico Steak with Peppercorn Sauce – next time I want an impressive meat dish to serve, I am totally trying this one. It’s a dish the Prime Grill is known for!

Potato Cake with Sweet Shallot Jam – how do you take a Jewish classic like potato kugel and turn it into a sophisticated restaurant dish? Apparently, this is how. Plus, it’s no secret that I have an obsession with shallots!

Apricot glazed beignets – think inside out jelly donut, and you pretty much understand why I am completely drooling at the thought of this!

Who this cookbook is for:

This cookbook is a great option for people who love to cook exciting and sophisticated food. If you find yourself stuck for ideas before a special event or occasion, this book will come in really handy!

Who this cookbook isn’t for:

If you’re looking for simple and basic meals for your every-day supper rotation, this book isn’t the one for you. Most of the recipes are more involved, and use more expensive ingredients than one might cook with on an average wekkday.

What I didn’t like about this cookbook:

Firstly, I should start by saying that I really enjoyed this cookbook. However, as I mention above, this won’t be my every-day go-to book, but rather, the one I pull off the shelf for special occasions.

Also, as previously mentioned, many of the recipes use ingredients that are slightly more expensive than I would use on an average day. For example, veal chops and delmonico steak. However, this is to be expected from a cookbook published by one of the top kosher restaurants in New York!

Lastly (you know I always mention the photography in a cookbook review!) I didn’t love the pictures in this book. Firstly, many recipes don’t have a picture, which we spoiled folks have gotten used to. Additionally, the pictures aren’t (to my very picky taste) quite as nicely styled or photographed as some other recent books.

Conclusion:

Overall, this is a well presented and exciting book full of ideas for sophisticated kosher dining. If you enjoy cooking, and enjoy celebrating special occasions with great food, this is a great book for you!

Want to win a copy of the book? Scroll down past the recipe for the giveaway!

And now for a delicious appetizer recipe. This one is actually simpler than it might look, and it’s completely delicious!

chicken satay 2

Thai Peanut Chicken Satay:

Adapted from The Prime Grill Cookbook by Miriam Pascal, OvertimeCook.com

Ingredients:

for the marinade:

1 cup water

1 Tablespoon curry powder

1 pinch cayenne pepper

1 cup creamy peanut butter

2-3 cloves garlic, finely minced

1/2 teaspoons salt

1 1/2 lb skinless boneless chicken breast

for the dipping sauce

1 cup reserved marinade

1/4 cup mayonnaise

2 teaspoons white vinegar

sliced scallions, optional, for garnish

Instructions:

Boil the water, curry powder and cayenne pepper in a small pot until reduced to about 3/4 cup.

Meanwhile, place the peanut butter, garlic and salt in a small mixing bowl. Pour the boiling water over it and whisk to combine. Reserve 1 cup for the dipping sauce.

Cut the chicken into thin strips and place in a plastic bag. Pour the remaining marinade over the chicken in the bag and toss to coat all of the chicken pieces. Place in refrigerator to marinate for about 2 hours.

Meanwhile, soak wooden skewers in water so they don’t burn when you grill them.

To cook the chicken – stick a skewer through the chicken pieces like a lollipop. Grill or fry on a grill (pan) or non-stick frying pan for about 2-3 minutes per side, or until cooked through. Repeat with all remaining chicken.  (The original recipe also says you can bake them at 350 on a lightly greased sheet pan for 9-10 minutes, but I haven’t tried this.)

To make the dipping sauce: Combine the reserved marinade with the remaining ingredients in a small bowl and whisk to combine. Serve alongside hot chicken skewers.

I am always conflicted whether I should order the steak in a restaurant or go with something I’ve never tried. {Note: I really like steak.} It’s a battle, but I usually make some kind of compromise – which ends with the peppercorn encrusted medallion with a demi glace. 🙂
