I've been busy lately creating some amazing recipes for my column in Ami magazine, but today, I am sharing one of my favorites from last year's column: Pecan Pie Hamantashen! These coffee crinkle cookies have no butter or margarine, but they do have an incredible texture and they're packed with flavor! Have we discussed recently just how much I adore coffee? Seriously, I like to say that it's coffee running through my veins - not blood. And while part of what I love about my beloved coffee is the caffeine, the buzz, the liquid energy, I also love the flavor. No, I really do. So much so, in fact, that I've even had decaf coffee a couple of times in my life. I know, crazy, right? But what can I say, coffee is just so awesome. So. Naturally, for a flavor this good, this beloved, I needed to come up with a rocking cookie...because, cookie. And boy did I come up … [Read more...]

Coffee Cake Cream Cheese Cookies

You might have noticed, if you're a steady reader, that I kinda like to use cream cheese in my recipes. Whether it's a great new cheesecake recipe, this delicious bundt cake,  these brown butter cookies, or perhaps my ever popular Cappuccino cookies, or even one of these delicious frostings, cream cheese just makes yummy things even yummier. Oh, wait. I almost forgot that one of my most popular recipes ever has cream cheese in it! Well. I guess I kind of can't help myself. I just keep putting cream cheese into more of my baked goods. Pumpkin Butterscotch Cookies

pumpkin butterscotch cookies on overtime cook

I wish I had a great story to share with you about these cookies, but sadly, I don't. It was a minute of inspiration, caused by the can of pumpkin sitting on my pantry shelf. I wanted to make pumpkin cookies, but most of the recipes I found were more to the cakey side. I wanted cookies with a chocolate chip cookie type texture, and struck gold with this recipe. Then, I couldn't help throwing in some butterscotch chips, y'know, for some more awesomeness. The pumpkin flavor of these cookies is subtle, but it's definitely there. Add the cinnamon and butterscotch and you have the perfect fall cookie. Don't have butterscotch chips handy? Sub chocolate chips instead for a delicious pumpkin … [Read more...]

Right here. Me, celebrating the second anniversary of the date that I pressed "publish" on my first ever post. And over the last 12 months, my amazement has grown, just like the blog. It's amazing how many of you come visit my tiny little corner of the internet. I'm awed and flattered to be a part of so … [Read more...]

Speculoos (Biscoff) Biscotti

Biscoff Biscotti on OvertimeCook

A trendy cookie like speculoos or biscoff combines perfectly with a traditional treat like biscotti. Intrigued? Read on! If you follow me on various social media platforms, you may have seen that I was just on vacation. And now I am not. Needless to say, I am not happy about that. I want to be at the beach, not in my kitchen waiting for cookies to cool, anticipating another long day of work tomorrow. But that's life. Some things, like the beach, are awesome. Some things aren't. Take, for example, my cookies and cream biscotti recipe. The recipe? Awesome. The pictures? Not so much. The result? Nobody really noticed them. Which is a darn shame, because trust me, they were of the don't … [Read more...]
