Brownie Bites
Adapted from Hershey's
  • 1 cup butter or margarine, melted
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ½ cup flour
  • ⅓ cup cocoa
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  1. Preheat oven to 350. Grease a mini muffin pan well and set aside.
  2. In the bowl of an electric mixer, or in a large bowl with a whisk, beat together the butter and sugar until smooth. Add the vanilla extract and eggs, stirring well to combine after each addition. Beat until the mixture is creamy.
  3. In a small bowl, whisk together the flour, cocoa powder, baking powder and salt. Stir into wet mixture and beat to combine.
  4. Use a small cookie scoop or a half tablespoon measuring spoon to drop the brownie batter into the prepared muffin pan.
  5. Bake at 350 for 9-10 minutes, until set.
  6. Remove from oven and allow to cool for a few minutes before turning the pan over to unmold.
  7. Set brownie bites aside to cool completely before frosting them.
