Fruity Pebble Cookies from Something Sweet

  • 2 sticks (1 cup) butter or trans-fat-free margarine
  • 1 1⁄3 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 egg yolks
  • 1 whole egg
  • 2 Tablespoons milk or soy milk
  • 2 1⁄3 cups flour
  • 1 1⁄2 cups Fruity Pebbles cereal
  1. Preheat oven to 375°F. Line 2 baking sheets with parchment paper; set aside.
  2. In the bowl of an electric mixer, on medium speed, beat together butter and sugar until creamy.
  3. Add baking powder, vanilla, salt, egg yolks, egg, and milk. Beat until smooth and creamy.
  4. Reduce mixer speed to low; add half the flour, beating until just incorporated; then add remaining flour. Do not overmix.
  5. Add cereal; turn the mixer off and on quickly for a couple of seconds, just enough to distribute the cereal. Do not overmix or the cereal will become too finely crushed.
  6. Use a medium cookie scoop (or a heaping tablespoon) to drop dough onto prepared baking sheets. Bake for 11 minutes.
