Roasted Green Beans with Asian Peanut Sauce

Serves: 4-6 servings
  • ¼ cup canola oil
  • 2 Tablespoons peanut butter
  • 2 Tablespoons soy sauce
  • 2 Tablespoons vinegar, preferably rice vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • 1½ lb green beans, ends trimmed
  1. Preheat oven to 400. Line a baking sheet with parchment paper and set aside.
  2. In a small bowl, whisk together all ingredients except for green beans. Stir until smooth.
  3. Pour sauce over green beans and toss until all beans are coated in sauce.
  4. Spread green beans in a single layer on lined cookie sheet.
  5. Roast at 400 degrees for 40 minutes, stirring halfway through.
