Pulled Barbecue Chicken Panini
Serves: 3 servings
  • 1 small red onion, cut in half ring slices (optional but recommended)
  • 1 can (10 oz) Kosher Club Chunked White Chicken, drained
  • ½ cup barbecue sauce
  • 3 large rolls
  1. If using onions, use the panini machine/george forman grill to grill the onions for about 6-8 minutes. Remove from grill and place in a bowl.
  2. Use a fork to shred the chicken (it's very soft and should shred easily). Place in bowl with the onions. Add barbecue sauce and mix until combined.
  3. Cut each roll in half, and spread a third of the mixture over half. Place the other half of the roll over it, then grill for about 6 minutes, until heated through. (The chicken is fully cooked, so you only need a few minutes cook time.)
  4. Serve immediately.
Plan Ahead:
  1. You can save time when making these by grilling the onions ahead of time.
  2. If you have leftovers, reheat on the grill for a couple of minutes before serving.
