Grilled Vegetable Chicken Panini
Spice Mix:
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon parsley
  • ¼ teaspoon oregano
  • ¼ teaspoon basil
  • 1-2 vegetables of your choice, including baby zucchini, yellow squash, plum tomatoes, purple onions
  • 1 can (10 ounces) Kosher Club Chunked White Chicken, drained
  • mayonnaise
  • tomato sauce, optional
  • 3 rolls or 6 slices bread
Make the spice mix:
  1. Combine all spices in a small bowl and store in a ziplock bag until ready to use.
Make the panini:
  1. Cut vegetables into slices toss with spice mix. Grill for about 4-6 minutes on panini machine/grill until cooked through. Remove from grill and place in a small bowl.
  2. Break chicken into smaller chunks, then toss with grilled vegetables.
  3. Spread mayonnaise on the top and bottom of each roll, then spread a layer of tomato sauce, if using.
  4. Spread the mixture onto the three rolls, then grill for about 6-8 minutes, until heated through. Serve immediately.
Plan Ahead:
  1. Make spice mix ahead of time and bring it with you in a ziplock bag. Feel free to multiply the recipe as needed.
