Pumpkin Spice Waffles

  • 2 cups flour
  • ½ cup brown sugar
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon nutmeg
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • ⅓ cup oil
  • 3 eggs
  • 1 cup milk or soy milk
  • maple syrup, for serving
  • salted or candied pecans, for serving
  1. In a large bowl, whisk together all of the dry ingredients.
  2. Add the remaining ingredients and stir until smooth.
  3. Heat a waffle maker and spray well to grease it.
  4. Spoon some of the batter onto the waffle iron. Cook according to your machine’s instructions. (For a large round waffle, as pictured, you’ll need a heaping half cup of batter.)
  5. Repeat with remaining batter.
  6. Serve immediately, with maple syrup and pecans.
