Peanut Butter Crumb Muffins

Serves: 20 muffins
  • ½ cup creamy peanut butter
  • ½ cup oil
  • ¾ cup dark brown sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch salt
  • 1 teaspoon vanilla extract
  • 1 cup milk or soy milk
  • 2 cups flour
  • ½ cup flour
  • ¼ cup sugar
  • ½ cup peanut butter chips (I used Best Select brand) or chocolate chips
  • ¼ cup creamy peanut butter
  • 1 Tablespoon oil
  1. Preheat oven to 350. Line a standard muffin pan with paper liners and set aside.
  2. In a medium mixing bowl, whisk together peanut butter, oil, sugar and eggs until creamy and smooth.
  3. Add baking powder, baking soda, salt, vanilla and whisk until combined.
  4. Add soy milk and whisk to combine.
  5. Switch from a whisk to a sturdy spoon and mix in the flour. Stir until a smooth batter is formed.
  6. Spoon mixture into prepared muffin pans, filling each about ¾ full. Set aside.
Make the crumbs:
  1. Mix all ingredients in a small bowl and stir (I used my fingers!) until crumbs form. Spread crumbs over prepared muffins.
  2. Bake for about 20 minutes, until the tops are set.
  3. Enjoy.
