Red Onion and Avocado Panini
Serves: 2 servings
Grilled Red Onions:
  • 1 red onion, cut in quarter rings
  • ½ teaspoon kosher salt
  • 1 ripe avocado
  • ½ teaspoon kosher salt
  • 1 teaspoon lemon juice
  • Assembly:
  • 2 rolls or baguettes, halved
  • shredded cheese of your choice (I used mozzarella)
Prepare the onions:
  1. Spray a panini grill or sandwich machine well. Add onions and sprinkle salt over them. Grill for about 5 minutes, until starting to brown. Stir halfway through. Set aside.
Prepare the avocado:
  1. Combine avocado, salt and lemon juice in a small bowl. Mash with a fork until combined.
Assemble the panini:
  1. Spread avocado mixture on the top half of the roll.
  2. Top with shredded cheese, then half of the onion mixture. Repeat with remaining roll, avocado, onions and cheese.
  3. Grill according to the instructions of your machine, until the cheese is melted and bubbly.
  4. Serve hot.
