Peanut Butter Truffle Pie + Happy 7th Birthday to Overtime Cook!
Serves: 10 servings
  • ½ cup creamy peanut butter
  • 3 eggs
  • ¼ cup oil
  • 1 teaspoon vanilla extract
  • ½ cup (packed) brown sugar
  • ¼ cup cocoa powder
  • ½ cup flour
  • ½ cup oreo type cookie crumbs
  • 6 ounces semi-sweet chocolate, melted and slightly cooled
  • 1 graham cracker pie crust
  • Chocolate Peanut Butter Glaze:
  • 2 Tablespoons cocoa powder
  • 1 cup powdered sugar
  • 2 Tablespoons peanut butter
  • 1 Tablespoon oil
  • 2 - 2½ Tablespoons water
  • ice cream, optional, for serving
Prepare the pie:
  1. Preheat oven to 350.
  2. In a medium bowl, whisk together peanut butter, eggs, oil, vanilla and brown sugar until creamy.
  3. Add cocoa powder, flour and cookie crumbs, Switch from whisk to spoon and mix them in.
  4. Stir in melted chocolate until combined and smooth. Spoon mixture into pie crust.
  5. Bake for about 30 minutes, until the top is set. Set aside to cool.
Prepare glaze:
  1. Combine all ingredients in a small bowl, Stir to combine. Add additional water as needed to reach desired drizzling consistency.
  2. Drizzle glaze over pie just before serving. If desired, top with a scoop of ice cream.
  1. Pie can be served warm, room temperature or semi-frozen.
