My husband enjoys taking them for either breakfast or a mid-day snack, and they're super easy, which means it's a quick task for me to keep the freezer stocked for him. I freeze muffins in individual bags, so they can easily be microwaved for a quick meal on the go. Naturally, I've been revisiting old favorites, such as these amazing blueberry muffins, peach crumb muffins, some healthy … [Read more...]

Mini Pumpkin Pie Trifles are a decadent and creamy twist on a classic treat. Do you receive the Overtime Cook newsletter? Full of recipes, kitchen tips and deals and more! Click here to signup. Here's a little secret. I've never had pumpkin pie. Crazy, right? Well. What can I tell you? Growing up, pies were usually fruit based. We'd have apple pie, cherry pie, and others. Occasionally, we'd have pecan pie. But somehow, I never had a slice of pumpkin pie. And because, as an adult, I enjoy creating twists on traditional favorites, I didn't bother with pumpkin pie. Instead, I made Pumpkin Pie Trifle. Are you ready for the next shocker? Here goes: I don't love heavily flavored … [Read more...]

Pumpkin Spice Crinkle Cookies

November 18, 2014 by overtimecook 20 Comments

Soft and chewy and full of fabulous fall flavors, these pumpkin spice crinkle cookies will be your favorite of the season! Who doesn't love a good crinkle cookies recipe? Everyone knows about the classic chocolate crinkles, but there are so many fun variations to play with! My first crinkle cookie variation on this blog was the Nutella Crinkle Cookie. It's basically a chocolate crinkle cookie but like, a million times better. Rolling them in chopped hazelnuts? Oh, that just about gives them the best texture ever. Next, I devised my Coffee Crinkle Cookies. I know that so many of you are already super into them. For those who aren't yet, you've got to get on that. If you love coffee and … [Read more...]

Maple Pumpkin Granola

November 7, 2013 by overtimecook 8 Comments

There are certain foods which I seem to forget about for a while, then I remember them suddenly. And as I eat said food, I kick myself as I wonder why I don't make it more often. Like, every day, for example. My Spicy Baked Zucchini Sticks are a perfect example of this. They are among the most popular recipes on this blog, and for very good reason. And I often forget that I've got such a delicious and easy recipe in my repertoire. Then I make them, and I get all confused as to why I haven't been making them daily since the day I came up with the recipe. Well, it turns out that homemade granola is another such example. I've made homemade granola plenty of times in the past, and totally … [Read more...]

Pumpkin Butterscotch Cookies

October 17, 2013 by overtimecook 22 Comments

I wish I had a great story to share with you about these cookies, but sadly, I don't. It was a minute of inspiration, caused by the can of pumpkin sitting on my pantry shelf. I wanted to make pumpkin cookies, but most of the recipes I found were more to the cakey side. I wanted cookies with a chocolate chip cookie type texture, and struck gold with this recipe. Then, I couldn't help throwing in some butterscotch chips, y'know, for some more awesomeness. The pumpkin flavor of these cookies is subtle, but it's definitely there. Add the cinnamon and butterscotch and you have the perfect fall cookie. Don't have butterscotch chips handy? Sub chocolate chips instead for a delicious pumpkin … [Read more...]

Marbled Pumpkin Bundt Cake with Brown Sugar Glaze

October 6, 2013 by overtimecook 30 Comments

I feel like I spend a lot of time describing recipes as "the best" or "the most popular" or maybe "the most successful" of the sort that I have ever made. My editor mentioned it to me recently. "You know, Miriam, if you keep telling your readers that the recipe is "the best you ever made," they might stop believing you. How many bests can you have?" Well, I don't know what it is with me and all of these superlatives, but this recipe? It deserves it. You'll have to trust me where this cake is concerned. Firstly, pumpkin has a magical effect on baked goods. It turns the treat moist and soft and so plain delicious. Add spices, chocolate and some other goodies, and you're left with a bundt … [Read more...]
