Carrot Ginger Salad Dressing
Here's something you should know about me. I don't really like carrots. Not raw ones anyway. Here's something else I should tell you. I despise ginger. Especially fresh ginger. One more thing. I love carrot-ginger dressing. Seriously love it. Always have. I first tasted this dressing, like many people did, at a local Japanese restaurant. Before we talk about the recipe I'm posting tonight, can we discuss the most amazing thing that happened? Two weeks ago, I published a recipe in the Ami magazine for a butterscotch bundt cake. I've been writing the column for more than half a year now, and have gotten some nice feedback before, but I was completely unprepared for this. Emails poured in from all over the world. Citrus Carrot Salad
A while ago, when Borders book stores were about to close their doors, they were blowing out all of their merchandise. Needless to say, I totally stalked the cookbook section, buying a lot more books than I should probably admit to. Most notably, I picked up a copy of Mark Bittman's encyclopedic book, How To Cook Everything. It was only today that I realized that I've never actually made a recipe from it. Don't get me wrong. I read the book (almost) cover to cover. I learned tons and tons from it. I've gotten ideas from it. But today I finally took it down to make a recipe. In my head, there's a whole post written up about how this may not be a very fancy or creative recipe, but I wanted to share it anyway, because this is my absolute favorite, go-to recipe for grilled chicken. But I am still recovering somewhat from this nasty combination of a cold, cough, strep and a sinus infection, so the whole complicated post isn't going to be written.
