Oatmeal Peanut Butter M&M Cookies on Overtime Cook

I can’t even tell you how many times I intended to post this recipe. I made it a whole bunch of times. And each time these adorable looking cookies got rave reviews. But somehow I never managed to write down the recipe. And worse, never got to photograph these cookies.

And so for months, these cookies went un-posted. And that’s a shame, because they’re really delicious. So I sacrificed for all of you. I baked up yet another batch of these cookies. On a fast day, of all days. Big mistake. These smell amazing when they bake, and my entire family was quite unhappy with me, forced to smell them when they couldn’t have a taste.

But finally I’m ready to share this recipe with you! If you love peanut butter, love chocolate, love oatmeal, or love M&M’s, these are for you. And if you love all of the above, go make these. Now.

Ingredients:

2 sticks (1 cup) butter or margarine

1 cup peanut butter

1 cup dark brown sugar

1 cup sugar

1 teaspoon vanilla extract

1 teaspoon baking soda

2 eggs

2 cups flour

2 cups oatmeal (rolled oats, not instant)

1 cup mini M&M’s

1 cup chocolate chips

Instructions:

Preheat oven to 375. Line a cookie sheet with parchment paper and set aside.

In the bowl of an electric mixer on medium speed, cream together the butter/margarine and peanut butter for about 30 seconds to combine.

Add the brown sugar and sugar and beat until creamy.

Add the vanilla, baking soda and eggs and beat until combined.

Turn the mixer to low, then add the flour, stir to combine. Add the oatmeal, M&M’s and chocolate chips. Stir to combine.

Scoop the dough out using a medium cookie scoop or a heaping tablespoon onto the prepared cookie sheet.

Bake at 375 for 11 minutes. Remove from oven and set aside to cool for a few minutes, then move to a cooling rack to cool completely.

    I said yes to all of the above, so I need this stat! Funny story – I’m actually baking another cookie recipe tonight, so I guess I have to torture myself and wait until next week to indulge on these.
