Y’know what distresses me, as a food blogger? Sometimes I have a recipe that gets buried under the awesomeness of another one. Like, when there’s a great cupcake recipe, and then it’s dreamy frosting recipe gets buries. Shame, especially because said frosting is totally my favorite chocolate frosting. Ever. And then there was the post with mouthwateringly delicious ribs, but nobody noticed the world’s best barbecue sauce that goes with it. Or with other food. Slathered over chicken cutlets on the barbecue grill this summer, for example. Oh, and did I mention my favorite salad dressing in the world – totally unique by the way – hidden inside a salad post?

And that brings us to today’s post. You see, this dressing was going to be part of a salad post. A darn good salad post, the kind you’re all going to make – again and again. But as I thought about preparing the salad and posting it, I worried about the fate of this delicious dressing. It’s too good to be hidden inside a post with so much other deliciousness going on. It deserves it’s own post!

Because this isn’t just a salad dressing. It’s a dip for your challah, or a sauce for your grilled chicken. It’s awesome and summery and SO easy to make. So stay tuned for the salad, but make this meanwhile!

Creamy Avocado Salad Dressing

Ingredients
  • 1 Ripe Avocado
  • ½ cup mayonnaise (I used lite)
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • salt, to taste
Instructions
  1. Combine all ingredients aside from salt in a blender or food processor and process until smooth.
  2. Taste and add salt, if needed.

    I’m so glad I found this! we used to go to someone’s house for shabbat lunch and she always made this salad with this dressing and i never asked her for it and i just loved it! I’m pretty sure it is this one, or really similar if not. I’m so excited I’m now going to go out and buy an avocado and make this dressing!
