Hello folks, and welcome to the second annual Chocolate Peanut Butter Day! This is a multi-blogger event hosted each year on March 25th by Carla of Chocolate Moosey and Miriam of Overtime Cook (that’s me!).

If you’ve been reading this blog for any length of time, you have got to know that I am intensely, overwhelmingly and ridiculously in love with the combined flavors of chocolate and peanut butter. Don’t get me wrong – I love chocolate. And I love peanut butter. But when you combine them? That’s pure bliss. And I know y’all agree with me – because…well, Chocolate. And peanut butter.

So to celebrate this great day (finest of food holidays, IMNSHO [In My Not So Humble Opinion]), Carla and I gathered together a group of awesome bloggers, and we all created some insanely amazing recipes for you – all of them starring…you guessed it: chocolate and peanut butter! Let’s talk about my cookies, shall we? My sister-in-law, Freidi (who is my partner-in-crime when it comes to enjoying chocolate peanut butter treats) complained to me a while back that peanut butter flavored baked goods are often not peanut-buttery enough. So I set out to change that. These phenomenal cookies are rich and dense, like the filling of a peanut butter cup. Then they’re coated in chocolate, giving them a texture and flavor almost like those favorite candies.

Peanut Butter Cup Cookies

Serves: 3 dozen
 
(Originally featured in my column in Ami/Whisk magazine.)
Ingredients
  • 1 (16.3 ounce) jar peanut butter
  • ½ cup oil
  • 2 cups brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 egg
  • 1 ¾ cup flour
  • melted chocolate, for dipping (about 5 ounces)
Instructions
  1. Preheat oven to 350. Line cookie sheets with parchment paper and set aside.
  2. In the bowl of an electric mixer on medium speed, beat together the peanut butter and oil until smooth. Add the sugar, vanilla, baking powder and egg and beat until smooth and creamy.
  3. Turn the mixer to low. Add the flour and beat until just mixed in.
  4. Scoop the dough out using a medium cookie scoop, then flatten slightly into a disk. (Note: the dough will be crumbly at this point. Just press it together and handle with care, and it'll be fine.)
  5. Bake at 350 for 12 minutes. Set aside to cool completely before dipping in chocolate.
  6. Once cooled, dip the cookie halfway in chocolate, then set back on the parchment paper to until the chocolate hardens.
  7. Tip: If you prefer, melt double the chocolate and dip them fully in chocolate. Alternatively, you can drizzle chocolate over the cookies instead of dipping.

    I just made these but they weren’t the same texture you described..maybe because I measured two cups pb? I don’t have such small jars of pb, more like 40 oz 🙂

    I just tried making these after seeing them in the Ami’s 500th whisk. The dough was so so crumbly! practically impossible to make into balls! was that supposed to happen?
