Four ways to make a gourmet, homemade supper in minutes: Chicken Panini Sandwiches!

A while back, I wrote this post about a new kosher product, Kosher Club Chunked White Chicken. In that post, I talked about the benefits of shelf-stable, fully cooked, ready to eat chicken. You should go ahead and read that first, so you’re fully caught up.
Read it? Okay, good. (To sum it up: I get 100 offers a week to promote products and turn down almost all of them because I don’t believe in them. This product is great and I genuinely believe in it!) Because today, I’m going to introduce you to the ultimate benefit: this product is absolutely perfect for traveling! That’s right. If you’re going on vacation to someplace without kosher food – no need to worry. No need to shelp coolers, worry about keeping your protein cold and safe. None of that.
Growing up, my mother always brought a portable grill along when we went on vacation. That has its merits, but finding a place to make a barbecue with kids who are hungry and cranky is never a fun option. You could opt for an indoor grill, but then you’re stuck worrying about coolers, prep, stuff like that.
Not with Kosher Club canned chicken. I know, I know, it’s a hurdle of sorts to get over – it sounds like something you might be skeptical about, right? (How many of you eat canned tuna though? Let’s be real here – how different is this?) But if you trust me (and you should! I would never promote a product I don’t believe in) then you’ll believe me when I say this is DEFINITELY my new favorite way to eat while traveling.
See, my method for a gourmet meal on the go is super simple: open a can of chicken, mix it with your favorite sauce, spread the mixture on a slice of bread or in a roll, and grill it. That’s it. Super easy, right? You can definitely come up with your own favorite ideas to try, but I’ve got my four favorites to get you started. For all of the following recipes, you’ll need to bring:
- Panini Machine or George Forman/Indoor Grill – this is the one I have and I love it.
- Can opener
- Knife (this one isn’t even needed for all of the recipes, but it’s convenient to have)
Really, that’s it! Anything else can be done easily on a plastic plate or bowl, and using a plastic fork or spoon. I promise. Ready? Let’s go through some of your options.

One of my favorites – Pulled Barbecue Chicken Panini – make this anytime and nobody would believe how simple it was to make!
- 1 small red onion, cut in half ring slices (optional but recommended)
- 1 can (10 oz) Kosher Club Chunked White Chicken, drained
- ½ cup barbecue sauce
- 3 large rolls
- If using onions, use the panini machine/george forman grill to grill the onions for about 6-8 minutes. Remove from grill and place in a bowl.
- Use a fork to shred the chicken (it's very soft and should shred easily). Place in bowl with the onions. Add barbecue sauce and mix until combined.
- Cut each roll in half, and spread a third of the mixture over half. Place the other half of the roll over it, then grill for about 6 minutes, until heated through. (The chicken is fully cooked, so you only need a few minutes cook time.)
- Serve immediately.
- You can save time when making these by grilling the onions ahead of time.
- If you have leftovers, reheat on the grill for a couple of minutes before serving.

And here’s another one that I love: Fajita Chicken Panini – perfect if you’re a fan of spicy food!
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon sugar
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cumin
- pinch cayenne pepper
- 1-2 vegetables of your choice, including colorful peppers or onions
- 1 can (10 ounces) Kosher Club Chunked White Chicken, drained
- mayonnaise
- 3 rolls or 6 slices of bread
- Mix all spices together in a bowl. Store in a ziplock bag until ready to use. (Feel free to double or triple the amount to use as needed.)
- Cut vegetables into strips and toss with spice mixture. Grill on panini machine/indoor grill for about 6 minutes, until cooked through. Remove from grill.
- Break chicken into smaller chunks and toss with grilled vegetables.
- Spread mayo on each side of each roll, then spread the chicken and vegetable mixture among all three rolls.
- Grill for about 5-7 minutes, until heated through.
- Enjoy immediately.
- If making this on the go, prepare the spice mix beforehand and bring it along in a ziplock bag.
- You can grill the vegetables ahead of time to cut down on prep time just before serving.

This one is full of flavor too – and it takes advantage of another canned product to make it shine: Teriyaki Chicken Panini!
- 1 can (10 oz) Kosher Club Chunked White Chicken, drained
- ¼ cup crushed pineapple (from a can)
- ¾ cup teriyaki sauce
- 3 rolls or 6 slices bread
- In a small bowl, shred chicken with a fork. (The chicken is very soft so this should happen in a minute or so.) Add crushed pinapple and teriyaki sauce. Stir to combine.
- Spread the mixture among the center of each roll. Grill for about 5-7 minutes, until heated through.
- Serve immediately.

And finally, a healthier recipe: Grilled Vegetable Chicken Panini
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon parsley
- ¼ teaspoon oregano
- ¼ teaspoon basil
- 1-2 vegetables of your choice, including baby zucchini, yellow squash, plum tomatoes, purple onions
- 1 can (10 ounces) Kosher Club Chunked White Chicken, drained
- mayonnaise
- tomato sauce, optional
- 3 rolls or 6 slices bread
- Combine all spices in a small bowl and store in a ziplock bag until ready to use.
- Cut vegetables into slices toss with spice mix. Grill for about 4-6 minutes on panini machine/grill until cooked through. Remove from grill and place in a small bowl.
- Break chicken into smaller chunks, then toss with grilled vegetables.
- Spread mayonnaise on the top and bottom of each roll, then spread a layer of tomato sauce, if using.
- Spread the mixture onto the three rolls, then grill for about 6-8 minutes, until heated through. Serve immediately.
- Make spice mix ahead of time and bring it with you in a ziplock bag. Feel free to multiply the recipe as needed.
If you’re not traveling anytime soon, no worries! You know what other occasion would be a great use for recipes like that? Those days when it’s just too hot to turn on your oven. Or those days when you have about 10 minutes to get supper on the table. Or any time when you want a delicious homemade meal with minimal prep and cleanup. In short….anytime!
