A breakfast take on a favorite summer treat: S’mores Waffles!

I’m really excited about today’s post. It’s not from me, but rather, from a foodie friend of mine who I know you’re going to love.

Sari Eller is my assistant. She helps me in the kitchen when I’m working hard, overtime, trying to test recipes and get them ready for photoshoots. She’s fierce in the kitchen, and keeps me on my toes. Oh, and did I mention the most important part? Sari is 15. She was 14 when she worked many hours on my cookbook. One day, she’s going to be a huge name in the kosher world, and you’ll have to remember that you “met” her here first!

Recently, when Sari came over, instead of helping make one of my recipes, I helped her make hers. We worked together to make these S’mores Waffles, then style and shoot the recipe, and here it is. In her own words…here’s Sari.

Hi Guys!

My name is Sari and I have been Miriam’s assistant for the past year.  We started  working together so that Miriam could get her gorgeous cookbook finished and into your kitchen but it didn’t take us long to discover that we shared a love for all things food related.
I’m probably a little obsessive about food and flavors and spend a lot of my spare time devouring any cookbook I can get my hands on, when I’m not doing homework or studying for tests, that is.  I did mention that I am 15 and in high school, didn’t I?
While I love cooking and baking just about anything, I really enjoy whipping up crazy, healthy concoctions, so when Miriam asked me to come up with an original recipe using seasonal fruits and vegetables  it seemed like a great idea.  I started thinking summer, imagining juicy red cherries and piles of green zucchini and then this incredible vision popped into my head.  It was s’more waffles:  graham cracker waffles studded with bits of melting chocolate and a sweet marshmallow glaze.  You’ll have to let me know what you think, but to me, they are the BOMB.
I guess I owe you all an apology.  I know Miriam was thinking  fruits and veggies but to me, summer is all about s’mores.  Maybe those huge green salads and overflowing baskets of fresh tomatoes leave me feeling virtuous and entitled to an indulgence. Or maybe I just have a one track mind when it comes to chocolate. Either way, it is most definitely the time to preheat the waffle iron and get started!

S'mores Waffles {Guest Post}

Serves: 8-10 servings
 
Ingredients
  • 2 cups finely ground graham cracker crumbs
  • ¾ cup flour
  • 2 Tablespoons brown sugar
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1 cup milk or soy milk
  • ¼ cup oil
  • ⅔ cup mini chocolate chips
Marshmallow Glaze
  • 1 cup marshmallow fluff
  • 1 teaspoon vanilla
  • 1 Tablespoon boiling water
Optional Garnishes
  • Chocolate Syrup
  • Crumbled Graham Crackers
  • Toasted Marshmallows
Instructions
  1. Combine graham cracker crumbs, flour, brown sugar, baking powder, baking soda, salt and cinnamon in a medium bowl. Whisk to combine.
  2. Add vanilla, eggs, milk and oil and mix until combined and smooth. Stir in chocolate chips.
  3. Spoon batter into hot waffle maker and cook according to manufacturer's instructions.
Prepare the glaze:
  1. Combine all ingredients in a small bowl and stir until smooth.
To serve:
  1. Top waffle with marshmallow glaze, chocolate sauce (if using), crushed graham crackers (if using), and Toasted Marshmallows (if using).
  2. Enjoy!
