As author of a dessert and baking cookbook, I’m sure you can imagine that I get a ton of questions about baking – about techniques, tools, and, of course, ingredients. One of those I get asked about all of the time is cocoa – specifically, the difference between unsweetened (or regular) cocoa powder and “dutch” or “dutch process” cocoa powder.
It’s important to know that there’s a big difference between the two, and they aren’t interchangeable. Dutch process cocoa powder undergoes a process that removed the acid, making it darker and richer. It’s also chemically different than regular cocoa powder, which is why it they can’t be used interchangeably. (For example, if the recipe requires acid to react, it may need the regular cocoa powder’s acid. Dutch process doesn’t have that acid. Sorry to go all sciency on you!) Anyway. The point is that when a recipe uses dutch process cocoa, like this one, it relies on the dark, rich chocolate flavors of the cocoa.
Another important thing I always teach people about ingredients is that quality is really important. Better ingredients equal better baked goods. As I’ve mentioned before, I’ve partnered with Best Select, a new company selling high quality baking and cooking supplies, including a fabulously rich dutch process cocoa. I was so excited to get baking, and immediately knew I had to make these brownies.
Naturally, I decided to take the brownies up a notch by adding coffee, because coffee is one of the few things that make chocolate even better. You can mix chocolate chips into the brownies, but I like to accent the flavor of the coffee with Best Select Cappuccino Chips.
Anyway, you’re going to love me after you try these brownies. Not only because of how easy they are, or even how delicious they are, but because they are the kind of fudgy that you’ll be dreaming about. Just take a look:

- 1 cup oil
- 3 eggs
- 1 Tablespoon instant coffee granules, dissolved in
- ¼ cup boiling water
- 2 cups sugar
- ½ teaspoon salt
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup Best Select Dutch Cocoa
- 1½ cups flour
- 1 container (8 oz) Best Select Cappuccino Chips or Chocolate Chips
- Preheat oven to 325. Grease two 8 inch square pans well and set aside.
- In a large mixing bowl, whisk together oil, eggs, coffee & water, sugar, salt, baking powder and vanilla until combined.
- Add cocoa and gently stir until combined and smooth.
- Add the flour and mix until combined. Stir in chocolate chips until evenly distributed.
- Divide batter between the two prepared baking pans. Bake for 30-40 minutes, until the center is set.
- Set aside to cool slightly before cutting into squares.
Note: If coffee flavor isn’t your thing, you can replace the coffee & water with an extra egg. Instead of cappuccino chips, you can go chocolate purist with chocolate chips, or add some extra flavor with Best Select Nougat or Peanut Butter Chips. Or try one pan one way, and one pan another way.

Great recipe. I had to edit it a bit, we can’t have too much sugar at home. I added 3/4 of a cup of sugar instead of 2, and a shot of nespresso coffee instead of instant. Unfortunately, didn’t have any chocolate chips so walnuts had to work and it came out delicious as well. Thank you for all of your amazing and yummy recipes!!!!!
