The nostalgic flavors of your childhood baked into a cookie: Peanut Butter & Jelly Cookies!

These cookies are one of the most fun I’ve created in a while. Let me tell you the story of them. Don’t worry, it won’t take long!
It started out when my six year old niece knocked on my door to give me a picture she drew of me. Let’s not mention her ulterior motive of wanting a treat before she goes back home. 😉 Anyway, I was just getting ready to bake some cookies, so I invited her to stay and “help” me bake. As I hadn’t decided yet what I was going to bake, I invited her to dig through my baking cabinet and find some stuff she wanted to use.
After considering a bunch of stuff, she pulled out these two items.
To be honest, she didn’t think they were peanut butter chips, she thought it was chocolate. And she had this concoction in mind that involved melting, drizzling, decorating and cupcakes. But being the smart aunt that I am, I was able to redirect her to cookies. Phew. With the combination of peanut butter and strawberry, my mind went straight to good ol’ fashioned pb&j. With my niece’s consent, we got started baking. The final product was better than I could have imagined! I knew the kids would love it, but I wasn’t sure if the adults would. Well let me just say that while sitting around the table shmoozing, the adults finished them all. I guess everyone loves PB&J!
I have to tell you the epilogue. I kinda struggled over whether or not to post this recipe, because I have a PB&J Sandwich Cookie in my new cookbook. I didn’t want to overshadow that one, but ultimately I decided that these are totally different, and worthy of being shared too! Those are dense, peanut buttery cookies, sandwiched with strawberry jam. These cookies are strawberry flavored, and dotted with peanut butter chips.
Anyway. You know you want them. Go and get baking!

- 1 cup oil
- 1 cup sugar
- 2 eggs
- ½ cup Best Select strawberry syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- pinch salt
- 3 cups flour
- 1 cup Best Select peanut butter chips
- Preheat oven to 350. Line a baking pan with parchment paper and set aside.
- In the bowl of an electric mixer on medium speed, beat together oil, sugar and eggs until creamy. Add syrup, vanilla extract, baking soda and salt. Beat until combined.
- Turn mixer speed to low and add flour, beat until just combined. Stir in peanut butter chips.
- Use a medium cookie scoop (or a heaping tablespoon) drop dough onto prepared cookie sheet, leaving plenty of room for spreading.
- Bake for about 10 minutes, until the tops feel set.

I can not wait to try these! Even my 11 yr old daughter (who does alot of my baking but is not a big fan of PB) thought they sound YUMMMM!
A couple of Questions:
Is this syrup the same as reg strawberry syrup (like for strawberry milk) or is there a major difference? I have some of that and then I can make them sooner 🙂
I know this will sound backwards but, can I make them with margarine? I might try with oil but in my experience oil cookies spread much more and I like mine thicker & smaller.
