Pastrami Wrapped Zucchini Sticks
Ingredients
Marinade:
- 1/4 cup mayonnaise
- 2 Tablespoons balsamic vinegar
- 2 Tablespoons maple syrup or honey
- 2 Tablespoons olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon chili powder
Assembly:
- 2 (6 oz) packages of pastrami cut in half lengthwise
- 2 large zucchini, cut into sticks
Instructions
1. Marinate zucchini: combine all marinade ingredients in a large bowl. Add zucchini sticks and toss to combine.
2. Set aside to marinate for about an hour, up to a few hours.
3. Prepare pastrami wrapped zucchini sticks: Preheat oven to 400. Like a baking sheet with parchment paper; set aside.
4. Cut the pastrami in half lengthwise, so you have long thin strips.
5. Remove a piece of zucchini from the marinade and wrap a strip of pastrami around it. Place seam side down on prepared baking sheet. Repeat with remaining zucchini and pastrami. DO NOT DISCARD REMAINING MARINADE!
6. Brush each piece of zucchini with reserved marinade, saving the rest.
7. Bake for 30 minutes, then remove from oven and brush with remaining marinade. Bake for another 5-10 minutes, until pastrami is crispy and caramelized.
Notes
Plan ahead: this dish is best fresh, but it can be prepared a day or two ahead of time and rewarmed, uncovered and in a single layer, until warmed through.
Note: leftover pastrami wrapped zucchini is amazing in salad! Cut it into bite size pieces and add to your favorite salad. I loved it as a way to dress up a simple ceasar salad!
