I must confess. I dreamed up this cake for the first time two years ago. I had plans to make and post it in time for Rosh Hashanah, but other things got in the way, so I promised myself “next year!”
Then last year came around and I just couldn’t get it one in time. I was so disappointed. Once again, I promised myself that I would get to it…next year.
Well friends, I am pleased to tell you that the third time is the charm! Not only did I make this cake, but the result is simply glorious! It’s deeply honey flavored, and the crispy crumbs on the top add the perfect textural contrast.

Honey Crumb Cake
Ingredients
- 4 eggs
- 1/2 cup oil
- 1 cups granulated sugar
- 1 cup honey
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon sea salt
- 2 teaspoons vanilla extract
- 2 1/2 cups flour
- 1 cup oat milk or non dairy milk
Crumbs
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1/3 cup sugar
- 3/4 cup brown sugar
- 1 Tablespoon cinnamon
- 3/4 cup oil
Instructions
- Preheat oven to 350. Grease a 9x13 pan well; set aside.
- In a medium mixing bowl, whisk together eggs, oil, sugar, honey, baking powder, baking soda, cinnamon, salt and vanilla extract. Whisk until smooth.
- Add half of the flour, followed by the oat milk, followed by the remaining flour. Whisk to combine after each addition.
- Pour batter into prepared pan; set aside.
- Prepare crumbs: place all ingredients in a small mixing bowl. Stir to form coarse crumbs.
- Sprinkle crumbs over the cake batter, covering it completely.
- Bake for 60-70 minutes, until a tester inserted into the center comes out clear.
Notes
Plan ahead: This cake can be frozen, well wrapped.

Can I make this in a bundt pan with the crumbs on bottom?
When I made the crumbs, they weren’t very crumby, and when it baked, they all melted together. You can’t tell that it’s a crumb topping. Did i do something incorrectly?
So delicious! Made it into 3 small loaves.
Can I make this in a 9 inch cake pan round
It will be too big. Better do make two round cakes.
If eating w a dairy meal, can you substitute butter for oil?
