This was a fun challenge! I was going to dice up the sweet potatoes and cook them in the same dish as the meat and mushrooms, but then I thought it would be more satisfying if the sweet potatoes were a separate vehicle for the meat. I also wanted to cook it all at the same time, so I slow roasted the sweet potatoes, then smashed them, then roasted them a bit at a higher temp to get kinda crispy and caramelized. I’m so thrilled with the end result! This was a satisfying dinner that was truly more than the sum of it’s parts.

Mushroom and Beef Stew over Smashed Caramelized Sweet Potatoes
Ingredients
MUshroom and Beef Stew
- 2 lb beef stew meat
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 large onion, diced
- 16 oz mushrooms, diced
- 3/4 cup chicken or vegetable broth
- 1 Tablespoon red wine vinegar
Caramelized Smashed Sweet Potatoes
- 4-6 sweet potatoes, halved
- olive oil, for sprinkling
- kosher salt, for drizzling
Instructions
- Prepare mushroom and beef stew: Preheat oven to 300.
- Place meat in a 9x13 baking pan and add all spices. Toss to coat all meat evenly on all sides. Top with onions, mushrooms, broth and vinegar.
- Cover tightly and bake for about 4 hours, until meat is fork tender.
- Prepare the sweet potatoes: Line a baking sheet with parchment paper. Drizzle olive oil and sprinkle salt on the baking sheet, then place the sweet potatoes cut side down on it.
- Bake for 1 1/2 hours at 300. Remove from oven and smash each half to flatten.
- Once meat is finished, raise heat to 450. Bake for an additional 10 minutes, until crispy.
- To serve, use a fork to break up the meat into smaller pieces. Place a serving of meat over a sweet potato half.
Notes
Plan ahead: Meat mixture can be prepared ahead and frozen. Rewarm covered until heated through. Sweet potatoes are best fresh but can be made 1-2 days ahead of time.
