Roasted Green Beans with Asian Peanut Sauce

Serves: 4-6 servings
- ¼ cup canola oil
- 2 Tablespoons peanut butter
- 2 Tablespoons soy sauce
- 2 Tablespoons vinegar, preferably rice vinegar
- 1 Tablespoon brown sugar
- 1 teaspoon garlic powder
- ½ teaspoon ground ginger
- 1½ lb green beans, ends trimmed
- Preheat oven to 400. Line a baking sheet with parchment paper and set aside.
- In a small bowl, whisk together all ingredients except for green beans. Stir until smooth.
- Pour sauce over green beans and toss until all beans are coated in sauce.
- Spread green beans in a single layer on lined cookie sheet.
- Roast at 400 degrees for 40 minutes, stirring halfway through.
