Avocado Turkey Burgers

Serves: 6-8 burgers
 
Ingredients
  • 1 ripe avocado, mashed
  • 1 small onion, minced
  • ¼ cup lite mayo
  • 2 teaspoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon black pepper
  • 1½ pounds dark ground turkey
  • ¼ cup flour (I used white whole wheat)
  • optional buns and vegetables, for serving
  • Spicy Mayo, recipe follows, optional
Instructions
  1. In a medium bowl, mix together avocado, onion, mayo, lemon juice, salt, garlic, parsley and pepper. Mix until smooth.
  2. Add turkey and flour and mix until combined.
  3. Form mixture into a patty, then fry or grill on a lightly greased frying pan or grill pan for about five minutes per side, until cooked through.
  4. Serve hot, on a bun, with your choice of toppings.
Plan Ahead:
  1. Prepare the mixture and freeze until ready to serve. Grill fresh.
