Baked Falafel Crusted Onion Rings
Serves: 4-6 servings
  • 1 large spanish onion, peeled and cut in ¼ inch slices
  • ¼ cup flour
  • 2 eggs
  • ¼ cup mayonnaise
  • 1 teaspoon salt
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 box (two inside packets) Knorr Falafel Mix
  • prepared tahini sauce, for dipping, optional
  1. Preheat oven to 450. Line a baking sheet with parchment paper, spray well with non-stick baking spray, and set aside.
  2. Separate the onion slices into individual rings. Place in a large bowl and toss with flour to coat all rings.
  3. In a small bowl, whisk together eggs, mayo, salt, parsley, garlic and cumin. Set aside.
  4. Place Knorr Falafel mix into a third bowl.
  5. One at a time, dip each onion ring into egg mixture, then into falafel mix, covering it completely. Place on prepared tray and repeat with remaining rings. Spray the tops of the coated rings with non-stick spray.
  6. Bake at 450 for 8 minutes, flip each ring, then spray the tops again. Bake an additional 8 minutes, until golden brown and crispy.
  7. Serve hot, with tahini sauce.
Plan Ahead:
  1. To reheat, place onion rings on a single layer on a baking sheet and bake, uncovered, until heated through.
