1-2 vegetables of your choice, including baby zucchini, yellow squash, plum tomatoes, purple onions
1 can (10 ounces) Kosher Club Chunked White Chicken, drained
mayonnaise
tomato sauce, optional
3 rolls or 6 slices bread
Instructions
Make the spice mix:
Combine all spices in a small bowl and store in a ziplock bag until ready to use.
Make the panini:
Cut vegetables into slices toss with spice mix. Grill for about 4-6 minutes on panini machine/grill until cooked through. Remove from grill and place in a small bowl.
Break chicken into smaller chunks, then toss with grilled vegetables.
Spread mayonnaise on the top and bottom of each roll, then spread a layer of tomato sauce, if using.
Spread the mixture onto the three rolls, then grill for about 6-8 minutes, until heated through. Serve immediately.
Plan Ahead:
Make spice mix ahead of time and bring it with you in a ziplock bag. Feel free to multiply the recipe as needed.
