Tomato Basil Grilled Chicken and Sausage Kabobs
Serves: 8 servings
  • 1 pint cherry tomatoes, halved
  • 15-20 small mushrooms (I used cremini), halved
  • 2 extra small zucchini (or one medium), cut in thick half ring slices
  • 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
Chicken and Sausage
  1. Combine all veggies in a medium bowl. Add oil, vinegar and spices. Toss to coat everything evenly. Set aside.
Chicken and Sausage
  1. Combine chicken pieces and sausage slices in a medium bowl. Add char crust mix and oil. Toss until all chicken and sausage is fully coated.
Assemble and Cook
  1. Assemble the skewers by alternating vegetables, chicken and sausage on the skewer, leaving room on each side for handling.
  2. Spray the assembled skewers with Spray On Basil.
  3. Grill over a medium/high flame for about 3-4 minutes per side, until the chicken is cooked through.
  4. Serve with your choice of condiments.
Plan ahead:
  1. These kabobs are best eaten fresh, but you can assemble them ahead of time and grill them just before serving.
