Tomato Basil Grilled Chicken and Sausage Kabobs

Serves: 8 servings
- 1 pint cherry tomatoes, halved
- 15-20 small mushrooms (I used cremini), halved
- 2 extra small zucchini (or one medium), cut in thick half ring slices
- 2 Tablespoons olive oil
- 1 Tablespoon balsamic vinegar
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- Combine all veggies in a medium bowl. Add oil, vinegar and spices. Toss to coat everything evenly. Set aside.
- Combine chicken pieces and sausage slices in a medium bowl. Add char crust mix and oil. Toss until all chicken and sausage is fully coated.
- Assemble the skewers by alternating vegetables, chicken and sausage on the skewer, leaving room on each side for handling.
- Spray the assembled skewers with Spray On Basil.
- Grill over a medium/high flame for about 3-4 minutes per side, until the chicken is cooked through.
- Serve with your choice of condiments.
- These kabobs are best eaten fresh, but you can assemble them ahead of time and grill them just before serving.
