4 ounces (1/2 cup) passion fruit juice (available in a box from Ceres brand)
1 ounce rum (or passion fruit flavored rum)
1 ounce blue curacao (available with an OU from Leroux brand), see below
corn syrup, optional, for garnish
blue sanding sugar, optional, for garnish
Instructions
Combine passion fruit juice, rum and blue curacao in a coctail shaker or pitcher with ice. Shake or stir to combine, then strain into a glass.
If desired, decorate the rim of the glass as shown in the picture by dipping the rim first into corn syrup, then into the sugar.
Note about blue curacao:
This is a delicious liqueur made from a fruit grown on the island of Curacao. It's got a great flavor, and the added blue color adds a fun tropical look to this cocktail. You can pick this up in your local liquor store, next to the other flavored liqueurs.
