2 Tablespoons Lieber's Foods Tomato Paste (from a tube)
3 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon dried basil
¼ teaspoon ground black pepper
1½ cups Lieber's Foods Gluten Free Panko Crumbs (I used unseasoned)
Lieber's Foods Avocado Oil Spray, for topping
Instructions
Preheat oven to 400 degrees. Line two baking sheets with parchment paper and set aside.
In a large bowl, combine avocado oil, balsamic vinegar, tomato paste, garlic, salt and pepper. Whisk to combine.
Add zucchini slices and toss until all slices are well coated. Place zucchini in a single layer on prepared baking panss; do not toss the leftover marinade.
Place panko crumbs into bowl with remaining marinade. Mix well until the crumbs have a texture like slightly damp sand. Place a generous amount of crumb mixture on top of each zucchini slice. Spray the tops well with avocado oil spray.
Bake for about 45 minutes, until zucchini is cooked through and crumbs are crispy.
Plan Ahead: This recipe is best fresh, but can be prepared a day or two ahead of time. Enjoy at room temperature or reheat uncovered until cooked through.
