Caramelized Onion and Cheese Manicotti from More Real Life Kosher Cooking

Ingredients
CARAMELIZED ONIONS
  • 2 Tablespoons oil
  • 3 large onions, diced
  • 1 teaspoon kosher salt
  • 1⁄4 teaspoon black pepper
  • 2 teaspoons brown sugar
FILLING
  • 1 (16-ounce) container cottage cheese (full fat)
  • 4 ounces shredded mozzarella cheese
  • 1 egg
  • 1 teaspoon kosher salt
  • 1 teaspoon dried parsley
  • pinch cayenne pepper
ASSEMBLY
  • 1 (8-ounce) box manicotti, cooked according to package directions
  • 1-11⁄2 cups marinara sauce
  • 4 ounces shredded mozzarella cheese
Instructions
Prepare the caramelized onions:
  1. Heat oil over medium-low heat in alarge frying pan. Add onions, salt, pepper, and sugar. Stir to combine.
  2. Sauté, stirring occasionally, for about 20 minutes. For best flavor, turn heat to low and cook for up to an hour. Set aside to cool.
Prepare the filling:
  1. In a large bowl, combine cheeses, egg, spices, and cooled onions.
Assemble:
  1. Preheat oven to 350°F. Coat a 9x13-inch baking pan with non-stick cooking spray; set aside.
  2. Fill cooked manicotti with cheese mixture (this is easiest to do with a piping bag); place into prepared baking pan.
  3. Spread marinara sauce over the filled manicotti; sprinkle with cheese.Bake for about 40 minutes, until the cheese is bubbling and golden.
Plan Ahead:
  1. You can prepare the filling and fill the manicotti a day or two ahead of time, then bake just before serving.
