Caramelized Onion and Cheese Manicotti from More Real Life Kosher Cooking

Serves: 6-8 servings
- 2 Tablespoons oil
- 3 large onions, diced
- 1 teaspoon kosher salt
- 1⁄4 teaspoon black pepper
- 2 teaspoons brown sugar
- 1 (16-ounce) container cottage cheese (full fat)
- 4 ounces shredded mozzarella cheese
- 1 egg
- 1 teaspoon kosher salt
- 1 teaspoon dried parsley
- pinch cayenne pepper
- 1 (8-ounce) box manicotti, cooked according to package directions
- 1-11⁄2 cups marinara sauce
- 4 ounces shredded mozzarella cheese
- Heat oil over medium-low heat in alarge frying pan. Add onions, salt, pepper, and sugar. Stir to combine.
- Sauté, stirring occasionally, for about 20 minutes. For best flavor, turn heat to low and cook for up to an hour. Set aside to cool.
- In a large bowl, combine cheeses, egg, spices, and cooled onions.
- Preheat oven to 350°F. Coat a 9x13-inch baking pan with non-stick cooking spray; set aside.
- Fill cooked manicotti with cheese mixture (this is easiest to do with a piping bag); place into prepared baking pan.
- Spread marinara sauce over the filled manicotti; sprinkle with cheese.Bake for about 40 minutes, until the cheese is bubbling and golden.
- You can prepare the filling and fill the manicotti a day or two ahead of time, then bake just before serving.
