Orange Cranberry Muffins

November 17, 2016 by overtimecook 5 Comments

Orange Cranberry Muffins are the perfect way to start of your day! Have a question about one of my recipes? The best place to get answers is the Overtime Cook Recipes Facebook Group. Click here to join the conversation. I've written about it before on this blog, but I think it's time we discussed, once again, how muffins are essentially cheaters. I mean, don't get me wrong. I like to eat them. I like to bake them. But if we're all being honest with ourselves, muffins are really just another excuse to eat cake. Granted, muffins mean there's built in portion control, so I guess that's healthier. But overall, in the famous words of Jim Gaffigan, "muffins are just bald … [Read more...]

August 7, 2016 by overtimecook 17 Comments

Chocolate Corn Muffins are dense and flavorful, like any good muffin should be! Have a question about one of my recipes? The best place to get answers is the Overtime Cook Recipes Facebook Group Five years of blogging. Five. Full. Years. Can you believe it? I know I can't. I had big plans for this year's bloggiversary. Five years, in my mind, deserved something spectacular. I considered various forms of layer cakes - layers of cake, frosting, and other delicious treats. But then I had second thoughts. You see, for five years I've been sharing recipes that are exactly the opposite of this elaborate cake I had in mind. My recipes have always been about approachability - the ones … [Read more...]

Healthy Strawberry Rhubarb Muffins

May 2, 2016 by overtimecook 13 Comments

Healthy Strawberry Rhubarb Muffins are sweet, tart, seasonal and good for you! A perfect start to your day! Have a question about one of my recipes? The best place to get answers is the Overtime Cook Recipes Facebook Group! Wow. Pesach is over and we all survived, right? Let me start by asking you this. What did you guys miss most over Pesach? Me? Ironically enough, not chometz. If you follow me on Instagram, you know that I missed popcorn. And cans of diet coke. I know, diet coke is available Kosher for Pesach but... it just isn't the same. (And my family's minhag is not to drink it on pesach. So, yeah. I missed it.) Oh, and we should probably talk about which recipes everyone … [Read more...]

Flourless Chocolate Banana Muffins

April 15, 2016 by overtimecook 10 Comments

These Flourless Chocolate Banana Muffins are so good, you won't believe they're kosher for passover and gluten free!    Today's post is going to be short, but I think these muffins really speak for themselves, don't you? My philosophy about pesach recipes, especially desserts, is to focus on the ingredients you do have, rather than be stumped by recipes that you don't have. In this recipe, I've used two baking ingredients that are totally kosher for passover, banana and chocolate, to make a delicious flourless, gluten-free muffins that you're going to love! Enjoy these for a passover breakfast, or top them with a dollop of chocolate mousse for a beautiful pesach dessert. … [Read more...]

Lightened Up Cappuccino Cheese Muffins

June 1, 2014 by overtimecook 24 Comments

Lightened Up Cappuccino Cheese Muffins are a great treat for people watching their weight! I know, I know. The last couple of weeks of this blog have been filled with one decadent treat after another. Each one has been a diet killer in its own right. "So what about the dieters?", you ask. "What's a poor soul to do if s/he isn't eating cheesecake, ice cream trifle, cheesecake mousse, delicious cookies, and all those other treats? Good news friend's. I feel for you. No really, I might be cooking, baking and photographing all sorts of fattening treats, but I've been dieting hard. Really hard. Like, one bite to make sure the cheesecake is good. We're in this together. And that's why I made … [Read more...]

Healthy Apple Spice Muffins

December 24, 2013 by overtimecook 19 Comments

Healthy apple spice muffins are so delicious, you will forget that they are good for you! I'm going to make a confession right now. You'd think that being on a diet and trying to eat delicious food that's still healthy, I would be coming up with all kinds of delicious new recipes to share with you. But sadly, that is just not the way it's been going. I am trying to make plenty of healthy food in minimum time, and I find myself lacking time, inspiration and motivation to play. I find myself turning to all of my old favorites, instead of creating new and exciting recipes. Don't worry, I'll get my creativity back soon. In the meantime, I decided to share one of my favorite healthy muffin … [Read more...]

Peach Crumb Muffins

August 13, 2013 by overtimecook 18 Comments

Hold on to summer with these delicious muffins - loaded with peaches, brown sugar and cinnamon, then topped with delicious crumbs! Where, might I ask, has the summer gone? Am I the only one who gets all panicky when the summer starts winding down? Did I do enough? Did I enjoy it enough? Did I eat all the right produce, have all the right barbecues, bask in the right sun? WIll I hang on to this warmth in a couple of months from now, when I'm struggling to stay warm through the cold New York winter? I don't know. I guess there's never enough of such good things. Like summer peaches. How delicious are they? And you have to admit that nothing in January will compare to the juiciness of them. So … [Read more...]

Blueberry Muffin Cookies

July 3, 2013 by overtimecook 27 Comments

If you've been reading my blog and/or magazine column for a while, you might have noticed that I like to do things a little differently. Here's an example. People love blueberry muffins. I have to say, I do too. And people even like a healthy version of blueberry muffins. I have to say, I find them to be a fabulous treat for my dieting self. But sometimes, I like to turn things on their heads. Make a completely different version of a classic. (Remember my S'mores Surprise Cookies, Rice Krispy Treat Bark, and other fun treats?) These cookies are a good example of this. Sure, I would have just made blueberry muffins, but where's the fun in that? So instead, I created blueberry muffin cookies. … [Read more...]

Healthy Blueberry Muffins

February 6, 2013 by overtimecook 27 Comments

Can we talk about names for a minute? I have a pet peeve. I know, my name is somewhat unusual. Okay, in the Orthodox Jewish world, Miriam is about as common of a name as you get, but in the general world, Miriam isn't very common. It's okay, I run with it. But here's the thing. Nobody can seem to get my name right. People call me at work, and I introduce myself as Miriam. "Did you say Maya?" I used to correct them, but I learned better. Just go with it. "That's right. Mary Anne." "Yes, I did say Maria." I don't bother, people don't get it either way. So the first part of my pet peeve is people who get my name wrong, then proceed to use it way too many times in the course of our … [Read more...]

Healthy Muffin Recipes

December 17, 2012 by overtimecook 10 Comments

Hey friends! Sorry, but I don't have a new recipe for you today. Partly because I totally didn't plan as well as I should have, partly because I spent too much time in the kitchen preparing for my family coming for for Chanukah, and partly because I spent a ton of time working on magazine and article deadlines. In short, I'm burnt out. (What, it happens!) I do, however, want to share something with you folks. I've been getting a ton of requests and questions on my healthy muffin recipes. Honestly, these are delicious. They're moist, flavorful and have a fabulous texture. Honestly. And because these recipes have been posted long before most of you found my blog, I figured a lot of you might … [Read more...]
