If you’re struggling with what to eat during the 9 days, I totally get it. I don’t touch fish (you guys should know that!) and I don’t want to spend a week eating pasta. I don’t believe the nine days are a time to eat all kinds of fancy, gourmet dairy dishes, but a person’s gotta eat, right?
Well that brings me to paninis! They’re my ultimate solution for a no-fuss, super-easy, filling dairy meal. You can do all kinds of fillings for yours, and here’s one of my favorites: Red Onion and Avocado Paninis!

- 1 red onion, cut in quarter rings
- ½ teaspoon kosher salt
- 1 ripe avocado
- ½ teaspoon kosher salt
- 1 teaspoon lemon juice
- Assembly:
- 2 rolls or baguettes, halved
- shredded cheese of your choice (I used mozzarella)
- Spray a panini grill or sandwich machine well. Add onions and sprinkle salt over them. Grill for about 5 minutes, until starting to brown. Stir halfway through. Set aside.
- Combine avocado, salt and lemon juice in a small bowl. Mash with a fork until combined.
- Spread avocado mixture on the top half of the roll.
- Top with shredded cheese, then half of the onion mixture. Repeat with remaining roll, avocado, onions and cheese.
- Grill according to the instructions of your machine, until the cheese is melted and bubbly.
- Serve hot.
