Honey Blueberry Bundt Cake
Ingredients
- 4 eggs
- 1/2 cup oil
- 1 cup sugar
- 1 cup honey
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/2 cups flour
- 3/4 cup parve milk
- 2 cups fresh or frozen blueberries
Glaze:
- 1 cup confectioners’ sugar
- 1 tablespoon honey
- 2-3 teaspoons milk, non dairy milk or lemon juice
Instructions
- Preheat oven to 350. Grease and flour a bundt pan; set aside.
- In a mixing bowl, combine eggs, oil, sugar, honey, baking powder, baking soda, vanilla extract and salt. Whisk until smooth.
- Add flour and milk. Whisk until a batter forms. Add blueberries and stir until distributed.
- Pour batter into prepared bundt pan. Bake about 50 minutes, until firm. Cool 20-30 minutes, then remove from pan. Set aside to cool completely before glazing.
- Prepare the glaze: stir all ingredients together in a small bowl until smooth. Drizzle over cake.
Notes
Plan ahead: this cake can be frozen, well wrapped, with or without the glaze.
