Marinated Tri-Color Pepper Salad Ingredients: 1 red pepper 1 yellow pepper 1 orange pepper 2 scallions 2 Tablespoons olive oil 1 Tablespoon Vinegar 1 teaspoon kosher salt 1 teaspoon sugar or sweetener Pinch black pepper Instructions: Dice the peppers and place in a small bowl. Every year, around this time, I get this panicky feeling as I think about the summer slipping away. Wait! How can summer be ending? I didn't have enough fun yet! I didn't do all of the summery things I wanted to do! This summer more so than usual. I've been working overtime at work, on top of my super long hours.
