Strawberry Oatmeal Cookies
Ingredients
- 1 cup oil
- 1 cup sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 packackge (3.4 oz) instant vanilla pudding mix
- 2 cups old fashioned oats
- 1 1/4 cup flour
- 2 packages (1.2 oz each) freeze dried strawberries (available at a number of stores, including trader joes)
Instructions
- Preheat oven to 350. Line a baking sheet with parchment paper, set aside.
- In a mixing bowl or electric mixer, whisk together oil, sugar, brown sugar, eggs, vanilla, baking soda, baking powder, salt and pudding mix. Mix until combined and creamy.
- Add oats and flour; stir to combine. Stir in freeze dried strawberries.
- Using a medium cookie scoop of heaping tablespoon, spoon dough onto prepared baking sheet.
- Bake for about 10 minutes, until the tops feel firm.
Notes
Plan Ahead: These cookies freeze well in an airtight container or bag.

This looks amazing! Can I use frozen strawberries (thawed, drained well and chopped) instead of freeze dried?
