I’m not sure if I should admit this publicly, but I have a ridiculous number of recipes that I have developed and even tested (sometimes even photographed!) and then I never got around to publishing them. It’s such a travesty.
Well today I had some overripe bananas and while looking for inspiration to use them, I stumbled across this recipe that I developed way back in 2020. Remember in the early days of the pandemic when the world was obsessed with banana bread? Well I turned banana bread into waffles and then promptly forgot about them. Until today. I retested the recipe and I’m pleased to announce that they are every bit as delicious now as they were back then!
Tip: if the batter makes more than you need at once, freeze half of it to cook fresh another day!

Banana Bread Waffles
Ingredients
- 2 cups flour
- 3/4 cup brown sugar
- 1 Tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1 cup mashed overripe banana (2-3 bananas)
- `1 1/2 teaspoons vanilla extract
- `1/4 cup oil
- 1 1/4 cup milk or non-dairy milk
Optional Toppings
- Maple syrup
- chocolate chunks
Instructions
- In a large mixing bowl, whisk together flour, brown sugar, baking powder, salt and cinnamon. Add remaining ingredients and whisk to form a batter.
- Heat waffle maker and cook waffles according to your machine's instructions.
- Serve immediately, with maple syrup and chocolate chunks, if desired.
Notes
Plan ahead: These waffles are best enjoyed fresh. Batter can be made ahead of time and stored for 1-2 days in the refrigerator or longer in the freezer.
