Homemade Golden Lollipops are the perfect way to enhance any party, and they’re a lot easier to make than they look!

Confession time: there’s a big part of me that wants to quit my job as a blogger and photographer and open up a business making homemade candy of all sorts. Sounds crazy to you? Well maybe it’s because you’ve never before experienced the thrill of watching sugar boiling over your stove, thermometer in place, watching magic happen.

These lollipops aren’t just beautiful, although obviously they are. They are delicious, and a whole lot easier to make then you think! Candy making is a perfect combination of super precision (don’t try this without a candy thermometer) and science mixed with creativity and fun (you can really go crazy here with shapes and decorations!). These beautiful golden lollipops are a perfect blank canvas for your decorations!
Just imagine the possibilities! You can place a vase of these at the center of your party table, you can place one in each glass, or even lay a homemade golden lollipop across each plate. Wrap them individually to give out as edible gifts that will wow your recipients.
In previous posts, I introduced you to Domino®’s new product, Golden Sugar, first with Sweet and Spicy Acorn Squash, then with these delicious Gingerbread Scones. The bag says it can be used cup-for-cup like granulated sugar, and I decided that there’s no better test of this than the precise art of candy making. Spoiler: it was perfect!
The nice thing about making these lollipops with Domino® Golden Sugar is that the hint of molasses adds a really nice flavor to these lollipops without adding artificial flavor extracts. The golden color doesn’t only make these elegant and beautiful, but it means you don’t need to add artificial food coloring to make these lollipops stand out! Combine that with the fact that Golden Sugar itself is less processed than granulated sugar, and you’ve got a real winner that you can feel great about – and be super proud of!

- 1½ cups Domino® Golden Sugar
- ½ cup water
- ⅛ teaspoon cream of tartar (available in the baking aisle of most grocery stories)
- ½ teaspoon vanilla extract
- flaky sea salty, optional, for topping
- golden sugar pearls, golden sprinkles or decorations, optional, for topping
- Candy thermometer
- lollipop sticks
- Place Domino® Golden Sugar, water and cream of tartar in a relatively small, lightweight pot. Stir to combine.
- Place pot on stove and add a candy thermometer. Cook, without stirring, until the thermometer reaches just under 300 degrees Fahrenheit. Note that at will take a few minutes to get there (probably 5-8), but once it reaches about 270 degrees Fahrenheit, watch it carefully because it'll go quickly from there. Do not let the sugar get to hot or it will taste burnt.
- While sugar mixture is cooking, prepare your workstation. Line the bottom of a baking sheet with parchment paper (you'll need a completely smooth surface). Prepare vanilla extract and a small dish of salt, sugar decorations, or both. Have lollipop sticks handy as well.
- Once sugar reaches just under 300 degrees, remove from heat. Wait about a minute for mixture to stop bubbling, then stir in vanilla.
- Carefully pour a thin stream of the liquid sugar mixture onto prepared parchment paper. Insert a lollipop stick into the sugar circle, then quickly top with flaky salt and decorations.
- Repeat with remaining sugar and sticks. Note that once you pour out the lollipop, you have less than a minute to add the decorations before it start to harden, so work quickly.
- If the sugar in the pot hardens before you finish pouring out the mixture, return pot to gentle heat for a minute or two, until softened, then continue forming lollipops.
Why do I need a candy thermometer to make this recipe?
The cool thing about cooking sugar is that depending on what temperature it cooks to, it’ll develop different textures. In order to get the perfect texture in your candy (in this case, lollipops), you need a thermometer to ensure you don’t under or overcook the sugar. Oh, and sugar that reaches too high of a temperature gets burnt and does not taste good! Luckily, candy thermometers are inexpensive, and there’s so much you can do with them – like make sure the oil you’re frying your chanukah donuts in is a perfect temperature.

Can I change the color and flavor of these lollipops?
Absolutely, in place of adding vanilla extract to make these Homemade Golden Lollipops, you can add a teaspoon of your favorite flavor extract – such as lemon, and a few drops of a corresponding color, such as yellow. You can also switch up the decor to either matching or contrasting colored decorations.
Can I make these ahead of time?
Absolutely! For best results, individually wrap your homemade golden lollipops in bags, or buy lollipop bags for the prettiest presentation.
