Pecan Butterscotch Cookies
Ingredients
- 1 cup oil
- 2 eggs
- 1 cup brown sugar
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoons vanilla extract
- 2 cups flour
- 1 cup chopped pecans
- 1 bag (9 oz) butterscotch or caramel chips
Instructions
- Preheat oven to 375. Line a baking sheet with parchment paper; set aside.
- In a mixing bowl, whisk together oil, eggs, brown sugar, sugar, baking soda, salt, baking powder, cinnamon and vanilla until combined and creamy.
- Add flour and use a spatula or wooden spoon to mix it in until a dough is formed. Stir in pecans and butterscotch chips until evenly distributed.
- Drop heaping tablespoons of dough onto prepared baking sheet. Bake for 9 minutes, or until set.
Notes
Plan ahead: these cookies freeze well in an airtight container or bag.
