I suggested she should make them, but she was sure they would have had to be super complicated and full of tons of ingredients. I laughed and told her how easy and simple they really are, and she was shocked. Try them and you’ll understand!

Chocolate Strawberry Crunch Truffles
Ingredients
Filling:
- 15 ounces bittersweet chocolate, chopped
- 2/3 cup strawberry jam (use a brand that’s smooth, without pieces)
- 1 1/2 cups Rice Krispies cereal, lightly crushed
Coating
- 10-12 ounces bittersweet chocolate, chopped, for coating
Instructions
1. Place chocolate chunks in a heatproof bowl over a pot of boiling water. Stir occasionally until melted.
2. Pour chocolate into mold, filling it completely. Immediately turn the mold upside down over the bowl and let it drip until there’s just a thin coating of chocolate on the surface of the mold. Set aside to harden.
3. Prepare the filling: heat chocolate in another heat-proof bowl over the pot of water until melted and smooth. Add strawberry jam and continue to heat, stirring occasionally, until melted through and mixture is completely smooth.
4. Remove filling mixture from heat and stir in crushed Rice Krispies cereal. Stir until evenly distributed.
5. Drop mixture into the coated mold, filling it until almost full. Set aside to cool.
6. Once filling is cooled and hardened, remelt the coating chocolate and fill the molds until the top. Set aside to cool again. Once cooled, untold the chocolate truffles.
Notes
Note:
You can decorate the truffles in various ways. Use melted chocolate to “glue” sugar crystals, sugar pearls or sprinkles onto the truffles. You can also use edible paint to pain the tops of the chocolates (as pictured).
Plan Ahead:
You can store these truffles in the freezer for a few weeks, until ready to eat. In general, you can store truffles in the fridge as well, but in this case, the cereal may lose its crunch in the fridge.
