Cheesy Vegetable Potstickers
Ingredients
- 2 Tablespoons oil
- 1 onion, thinly sliced
- 1/2 teaspoon kosher salt
- 3 cubes frozen garlic
- 1 cube frozen ginger
- 1 small red pepper, thinly sliced
- 3 cups coleslaw mix OR shredded green cabbage
- 1 1/2 cups shredded mozzarella cheese
- Assembly:
- 1 pack wonton wrappers
- Oil for frying
- Dipping Sauce:
- 1/4 cup soy sauce
- 1/4 cup honey
Instructions
1. Heat oil in a large frying pan over medium-high heat. Add onion and salt and cook, stirring occasionally, for about 5 minutes, until softened.
2. Add remaining ingredients. Turn heat to medium-low and cook, stirring occasionally, for 10-15 minutes, until mixture is softened and starting to get some color. Set aside to cool.
3. Once cool, add cheese and stir until evenly distributed.
4. Assemble the potstickers: place a spoonful of filling in the center of a wonton wrapper.
5. Brush water along the edge of the wrapper with your finger to help the edges stick. Fold the wrapper in half over the filling and press tightly to form a triangle or half circle, depending on the shape of the wrapper. (See note for instructions on pleating the edges, as shown in the photo.)
6. Heat a large frying pan (with a tight fitting lid) over high heat. Add oil to cover the bottom in a thin layer of oil.
7. Add potstickers and cook on high for a minute or two, until the bottoms are crispy and somewhat brown. (Work in batches to avoid over crowding the pan.)
8. Turn heat to low, immediately add 2-3 tablespoons of water, then quickly cover the pan. The steam from the water will cook the tops of the potstickers.
9. Continue cooking on low for 3-5 minutes, until the water has all cooked out and the tops of the potstickers are softened and cooked through.
10. Return heat to high and let the potstickers cook for another minute or two, until very crispy and nicely browned. (Do not flip!)
11. Remove from pan and repeat with remaining potstickers.
12. Prepare the optional dipping sauce: combine soy sauce and honey in a small bowl and stir until combined.
Notes
Variations:
Have extra filling? It makes a delicious filling for a cheesy vegetable omelette!
Omit the cheese for a parve appetizer.
Plan ahead:
Potstickers are best enjoyed fresh. You can prepare the filling and assemble the potstickers, then freeze them. Defrost and cook just before serving.
Note:
To make the pleated shape you see in the photo, instead of sealing the wonton wrapper in half, fold small sections back onto itself. Pinch tightly to ensure they stay closed. This is totally optional and just for looks, so feel free to fold it simply instead!
