If you don’t follow me on Instagram, you’re missing half of this story. Last night, feeling uninspired, I let my followers vote on my dinner ingredients. Using polls, they chose: Chicken cutlets, broccoli and rice. The obvious choice was to go in an asian direction with it, but I challenged myself to go in a less obvious direction and make something delicious to share with you.
I’m pleased to say, this dinner was an absolute winner. It took about 20 minutes to prepare, and tasted fantastic. I hope you try it, and join @overtimecook on instagram to take part in the next installment of what is now a series.

BBQ Chicken and Rice Bowls with Charred Broccoli
Ingredients
Baked rice:
- 1 cup white rice
- 2 cups room temperature water
- 1 teaspoon kosher salt
- 2 teaspoon oil
Chicken and Broccoli:
- 1 1/2 - 2 lb chicken cutlets, preferably dark
- 2 Tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 2 teaspoons paprika, preferably smoked
- Oil, for pan frying
- 1 lb broccoli or broccolini florets
Dipping Sauce:
- 1/2 cup mayonnaise
- 2 Tablespoons barbecue sauce
- 1 Tablespoon maple syrup, optional
Instructions
- Prepare the rice: Preheat oven to 350.
- Place all rice ingredients in a 8 inch pan. Cover tightly and bake for 1 hour for a disposable pan, about 50 minutes for a real pan.
- Remove rice from oven and keep it covered for about 10 minutes, then uncover and fluff with a fork.
- Prepare chicken and broccoli: Combine chicken, oil and spices in a bowl and mix well to fully coat chicken.
- Heat a thin layer of oil in a large frying pan over high heat. Add chicken and cook for about 5 minutes per side, until cooked through and crispy on the outside. Cook the chicken in batches to prevent overcrowding the pan. Set aside.
- Without washing the pan, add the broccoli over high heat. Cook for 3-4 minutes, until charred.
Cover pan and reduce heat. Let broccoli steam for another 3-4 minutes, until it reaches desired level of doneness. Season with salt, to taste. - Prepare dipping sauce: combine all ingredients in a small bowl or container.
- To assemble: place cooked rice in a bowl. Slice chicken and place over the rice. Add some broccoli. Finish with a drizzle of the sauce.
Notes
Plan Ahead: This dish is best fresh, but if necessary the components can be prepared 1-2 days ahead of time. Assemble just before serving.
