You all know how much I love apples, and love putting them into recipes. (In fact, I just mentioned it in my previous post!) Well you probably also know how much I love to bake, and to try new baking products. I’ve been known to roam up and down the baking aisle of my local grocery stores, looking for inspiration in the various containers of yummy confections. Chocolate chips, caramel chips, colorful sprinkles and sugar…I love these and enjoy looking for the new recipe potential in all of them.
So you can imagine how excited I was when the folks at Muzon Foods contacted me and asked me to come up with some recipes and ideas for their newest product: Caramelized Apple Dices. From the minute I got my hands on a sample, I was hooked. These are tiny pieces of dried apple, lightly sweetened and a little hard. Not crack-your-teeth hard, but not soft like typical dried apples. And the small size makes them a great option for baking and cooking. As you can imagine, the wheels in my brain immediately started turning, coming up with ideas for this new product. And one of my first thoughts was to make biscotti! Normally, soft and juicy apples wouldn’t work with the hard texture of biscotti, but the caramelized apple dices are the perfect texture for biscotti.
What can I tell you, except that these cookies are all kinds of amazing! They have the cinnamony flavor we all love and associate with apples, plus a very present apple flavor. And the best part? No peeling. No chopping. Just open a package and pour it in! So head out to your local grocery store and look out for this new product by Muzon Foods. You’ll probably find it in the baking aisle, next to all those yummy chips and colorful sprinkles that you’re used to seeing from Muzon.

- ⅓ cup oil (I use canola)
- ¾ cup sugar
- ¼ cup Muzon brown sugar
- 1½ teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon Muzon cinnamon
- ¼ teaspoon salt
- 3 eggs
- 3 cups flour
- 1 heaping cup of Muzon Caramelized Apple Dices
- Preheat oven to 350. Line a cookie sheet with parchment paper and set aside.
- In the bowl of an electric mixer on a medium speed, beat together the oil and sugars for a minute. Add the baking powder, vanilla, cinnamon, salt and eggs. Beat until smooth and creamy. Scrape the bottom if needed to make sure all ingredients are incorporated.
- Turn the mixer speed to low. Add the flour, one cup at a time, and beat until it's all mixed in. Add the Caramelized Apple Dices and mix until they are incorporated.
- Divide the dough in half, and form two long logs, about 9x3 inches each. (The dough will be sticky, so it will be easiest to form the logs with slightly damp hands.) Leave some room between the logs for spreading.
- Bake at 350 for 30 minutes. Remove from oven and let it cool for about ten minutes, then slice (on a diagonal) into half-inch slices. (They will be pretty soft at this point, so handle with care.)
- Lay the cookie slices out on the pan and bake for ten minutes. Flip all of the cookies over and bake for an additional ten minutes.
