I always find it ironic that some people think of chicken capons as an old-fashioned dish. Maybe it's time to rename it chicken roulade and celebrate how beautiful this chicken looks on the plate (especially when you serve it sliced, as pictured). This is my favorite type of chicken dish to serve at holiday meal. It's a sauce chicken, which means I make it ahead of time and freeze it (yes! you read that right!), plus the sauce stands up to reheating on the hotplate.
