These cookies are simply perfect. Full of pools of chocolate, delicious flavored chips, and topped with flaky sea salt, these cookies are simply jumbo perfection.

Jumbo Loaded Chocolate Chunk Cookies
Ingredients
- 1 1/2 cups canola oil
- 3/4 cup sugar
- 1 cup dark brown sugar
- 1/4 cup corn starch
- 2 eggs
- 2 egg yolks
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon salt (I use sea salt)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 cups flour
- 15 oz semi-sweet chocolate, chopped (I use Liebers)
- 3/4 cup nougat or chocolate chips
- Flakey or coarse sea salt, for sprinkling
Instructions
Preheat oven to 325. Line two baking sheets with parchment paper and set aside.
In the bowl of an electric mixer on medium speed, beat together oil, sugar, brown sugar, cornstarch, eggs and egg yolks until combined and creamy.
Add vanilla, salt, baking soda and baking powder. Mix well to combine.
Turn mixer speed to low. Add flour and mix just until a dough forms. Do not overmix.
Add 3/4 of the chocolate chunks and the nougat chips. Mix on low just until evenly distributed.
Use a 1/3 cup measuring cup to measure out the dough. Place a couple of the reserved chunks on the top, then roll into a ball and place on prepared baking sheet. Repeat. I baked four cookies per tray.
Sprinkle flakey salt over the tops of each cookie.
Bake for about 20 minutes, until the top feels set.
Notes
Plan ahead:
These cookies freeze well in an airtight bag.
Variation:
Bake regular sized cookies at 375 for 9-10 minutes.
Make it dairy:
Use a stick of butter in place of 1/2 cup of oil. Chop a couple of milk chocolate bars instead of the dark chocolate, and a dairy white chocolate bar instead of the nougat chips.
