You know those soft, cakey honey cookies that taste good but feel very one-note? I like them, but I certainly don’t love them. I knew I could come up with something better. And that’s how my Honey Crunch Cookies were born! These are soft and cakey on the inside, with a delightful crunch on the outside that will keep you coming back for more. And more. And more. Yeah, they are kinda addictive!

Honey Crunch Cookies
Ingredients
- 1 cup oil
- 1 cup honey
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- Pinch nutmeg
- 4 cups flour
- 4 cups cereal such as honey nut Chex or Frosted Flakes, lightly crushed
Instructions
- Preheat oven to 350. Line a baking sheet with parchment paper; set aside.
- In a mixing bowl, whisk together oil, honey, brown sugar, egg, vanilla, baking soda, salt and cinnamon until combined and creamy.
- Stir in flour. Mixture will be a fairly stiff dough.
- Place cereal into a small bowl. Roll out balls of cookie dough and roll in the crushed cereal. Because dough isn’t really sticky, you’ll need to press the cereal into the cookie to make sure it adheres.
- Place cookies on prepared baking sheet. Bake for 10-11 minutes, until cookies are set.
Notes
Plan ahead: these cookies can be frozen in an airtight bag.
