I know you’re all looking for exciting new Passover recipes. Last week’s roundup of over 100 Delicious Passover Recipes has already been viewed nearly 100,000 times(!!), so trust me…you’re not alone in your search! Barely a day goes by when I don’t see someone raving about Tori’s amazing Schwarma recipes in one of the facebook cooking groups I’m in – and that’s just one of so many. Tori’s work as a culinary anthropologist is fascinating! One of my favorite things on her blog is the Passover Potluck – a pre-passover, virtual event celbrating flavors and cultures related to passover and it’s food. It’s an honor to be a part of it this year, and I’m excited to be sharing one of my new favorite dishes with Tori’s readers – and you!

I wish I had found this recipe over the summer! We always grow an abundance of zucchini and run out of ideas for using them. This would also be great for remedying my dry-chicken issues. I bet the combination of zucchini and chicken together keeps lots of moisture in. Can’t wait to try it when the zucchini come back in season!
