Grilled Chicken Peach and Pastrami Skewers are a fantastic summery combination of sweet, savory and smokey flavors!

I know thoughts of Rosh Hashanah recipes and holiday cooking are starting to creep into the back of everyone’s mind, but I’m here to say that it’s only halfway through August. There’s still summer and we all better hang on to it, just a little bit longer, before the days are short and you’re dreaming of lazy summer afternoons and family barbecues. 

You know whats a really great way to hang on to the summer? Grilled Chicken Peach and Pastrami Skewers.

Ok, I know that this might sound like an unusual combination, but let me just tell you….it WORKS! There’s something so magical about the savory chicken, smokey pastrami, and sweet peaches that combine to create a dish that’s really incredible and hard to resist. Plus, it’s so pretty!

Try this for a special dinner one night, or better yet, make some skewers for a shabbos lunch appetizer. Wow factor right there, huh?

Grilled Chicken Peach and Pastrami Skewers

Serves: 10-12 skewers
 
Ingredients
  • Marinade:
  • ¼ cup olive oil
  • 2 Tablespoons honey
  • 2 Tablespoons lemon juice
  • 1 teaspoon kosher salt
  • 1 teaspoon dried basil
  • 2 cloves garlic, minced OR 2 cubes frozen garlic
  • Assembly:
  • 6 ounces pastrami
  • 1 pound chicken cutlets, cubed
  • 3 peaches, cubed
Instructions
  1. Combine all marinade ingredients in a small bowl. Whisk to combine; set aside.
  2. Cut a slice of pastrami in half along the width, to get two long thin strips of pastrami. Thread the pastrami onto the skewers, around the cubes of chicken and peach. Use both halves of a pastrami slice per skewer. Set aside on a baking sheet and repeat with remaining pastrami, chicken and peaches.
  3. Brush marinade over all sides of the skewers. Broil or grill for 4 minutes. Flip, baste with additional marinade, and grill on the other side for about 4-5 minutes, until chicken is cooked through.
Note:
  1. It takes an extra few minutes to thread the pastrami around the chicken and peaches. For a simpler presentation that saves you time, you can cut the pastrami lengthwise, into strips, and place on skewers in between the chicken and peaches.
Plan Ahead:
  1. Skewers can be prepared a day ahead of time, then rewarmed, uncovered. They make a great appetizer for shabbos day!
