While looking through this blog’s archives, trying to serve up some shavuos menu ideas, I came to a realization: I don’t share nearly enough dairy meal ideas here on this blog. To remedy that, I immediately got to work developing a brand-new dairy main dish idea. But until that one makes an appearance (stay tuned!) I’ve got a shavuos gift to all of you in the form of an incredible cheesy pasta recipe from my most recent cookbook, More Real Life Kosher Cooking.
If you already have this cookbook, you’ve surely seen the delicious dairy recipes I’ve shared there, including One-Pot Cheesy Spinach Pasta, Mac and Cheese Waffles, and Sweet Pea and Ricotta Ravioli. This one, Caramelized Onion and Cheese Manicotti is a personal favorite from the cookbook. The sweetness from the onions, the salty, savory quality to the cheese filling, the delicious pasta and the melty cheese over the top. What’s not to love?!
If you’re not a big fan of manicotti, you can also use other fill-able pasta shapes, such as jumbo shells or even lasagna. No matter how you make it, you’re going to love this dish! Oh, and if you’re looking for more dairy shavuos recipe ideas, I’ve got you covered:
Mac and Cheese with Buttery Herbed Breadcrumbs
Spaghetti Cheese and Spinach Pie
- 2 Tablespoons oil
- 3 large onions, diced
- 1 teaspoon kosher salt
- 1⁄4 teaspoon black pepper
- 2 teaspoons brown sugar
- 1 (16-ounce) container cottage cheese (full fat)
- 4 ounces shredded mozzarella cheese
- 1 egg
- 1 teaspoon kosher salt
- 1 teaspoon dried parsley
- pinch cayenne pepper
- 1 (8-ounce) box manicotti, cooked according to package directions
- 1-11⁄2 cups marinara sauce
- 4 ounces shredded mozzarella cheese
- Heat oil over medium-low heat in alarge frying pan. Add onions, salt, pepper, and sugar. Stir to combine.
- Sauté, stirring occasionally, for about 20 minutes. For best flavor, turn heat to low and cook for up to an hour. Set aside to cool.
- In a large bowl, combine cheeses, egg, spices, and cooled onions.
- Preheat oven to 350°F. Coat a 9x13-inch baking pan with non-stick cooking spray; set aside.
- Fill cooked manicotti with cheese mixture (this is easiest to do with a piping bag); place into prepared baking pan.
- Spread marinara sauce over the filled manicotti; sprinkle with cheese.Bake for about 40 minutes, until the cheese is bubbling and golden.
- You can prepare the filling and fill the manicotti a day or two ahead of time, then bake just before serving.
