Did you know I have a famous cousin? My cousin Beatie Deutch is an Israeli marathon champion and was recently visiting me in Los Angeles, so we decided to cook together. Naturally, I came up with this spectacular summer salad that is simple and easy to throw together, but the flavors just POP. In fact, I’ve made it every shabbos since this was filmed, because it’s THAT good!

Grilled Corn Salad with Peaches and Sugar Snap Peas
Ingredients
- 4 ears corn
- 2 peaches, diced
- 8 oz sugar snap peas, sliced or diced
Dressing:
- 1/3 cup olive oil
- Juice of 1 lemon
- 1 frozen garlic cube
- 4 frozen basil cubes
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Instructions
- Prepare the dressing: Combine all ingredients in a small container. Whisk or shake to combine; set aside.
- Grill corn: Grill corn on high heat either directly over the flame of your stove, or using a broiler or BBQ grill, until charred on all sides. Set aside to cool.
- Prepare salad: Cut corn off cob and place in a bowl. Add peaches and sugar snap peas. Top with dressing then toss to fully combine .
Notes
Salad can be stored in the fridge for 2-3 days.
